Classic Middle Eastern Tabbouleh Salad
Ingredients
- 3 bunches fresh parsley
- 2 Roma tomatoes
- Pinch of salt
- 2 tbsp lemon juice
- 1/2 cup bulgur
- 1 cup water
- 1 cucumber
- 2 green onions (scallions)
- 2 tbsp mint
- 1/2 cup olive oil
- 1/2 cup lemon juice
- 1/2 tsp salt
- 1/2 tsp pepper
Preparation
Soak the bulgur in water for about 30 minutes or until tender, then drain any excess water
Finely chop the parsley, tomatoes, cucumber, green onions, and mint
In a large bowl, combine the chopped vegetables and the soaked bulgur
Whisk together the olive oil, lemon juice, salt, and pepper to make the dressing
Pour the dressing over the salad mixture and toss well to combine
Let the salad sit for at least 15 minutes to allow the flavors to meld before serving
