Fried Eggplant Fattoush Salad

Ingredients

  • Lettuce
  • Tomatoes
  • Cucumbers
  • Radishes
  • Purslane
  • Mint
  • Parsley
  • Pomegranate
  • Onion
  • Eggplant
  • Bread

Sauce

  • Lemon juice
  • Pomegranate molasses
  • Salt
  • Olive oil
  • Sumac
  • Pinch of dried mint

Preparation

  1. Fry the eggplant and bread until golden and crispy

  2. Chop the lettuce, tomatoes, cucumbers, radishes, purslane, mint, parsley, onion, and pomegranate into bite-sized pieces

  3. Mix the lemon juice, pomegranate molasses, salt, olive oil, sumac, and dried mint to prepare the sauce

  4. Combine all the chopped vegetables, fried eggplant, and fried bread in a large bowl

  5. Pour the sauce over the salad and toss well to coat evenly

  6. Serve immediately for the best texture and flavor
