Super Healthy and Easy Tabbouleh Salad
Ingredients
- 3 bunches fresh parsley
- 2 Roma tomatoes
- Pinch of salt
- 2 tbsp lemon juice
- 1/2 cup bulgur
- 1 cup water
- 1 cucumber
- 2 green onions (scallions)
- 2 tbsp mint
- 1/2 cup olive oil
- 1/2 cup lemon juice
- 1/2 tsp salt
- 1/2 tsp pepper
Preparation
Soak the bulgur in water until tender, about 30 minutes
Finely chop the parsley, tomatoes, cucumber, green onions, and mint
Mix olive oil, lemon juice, salt, and pepper to make the dressing
Combine all chopped ingredients and dressing in a bowl and toss well
