Easy Roast Garlic Pasta Dish
Ingredients
- 1-2 whole heads of garlic
- Olive oil
- Pasta
- Salt
- 1 unwaxed lemon
- Fresh parsley
Preparation
Preheat the oven to the appropriate temperature.
Chop off the top of 1-2 heads of garlic, drizzle with a little olive oil, and bake for 50-60 minutes until caramelized.
While the garlic is roasting, boil the pasta according to package instructions and reserve a little of the pasta water when draining.
Once the garlic is ready, squeeze the cloves into a large bowl.
Add a couple of tablespoons of olive oil, a couple of tablespoons of the reserved pasta water, a little salt, the zest and juice of 1 unwaxed lemon, and lots of chopped fresh parsley to the bowl.
Mix everything well and stir through the warm pasta.
