Easy Roast Garlic Pasta Dish

Ingredients

  • 1-2 whole heads of garlic
  • Olive oil
  • Pasta
  • Salt
  • 1 unwaxed lemon
  • Fresh parsley

Preparation

  1. Preheat the oven to the appropriate temperature.

  2. Chop off the top of 1-2 heads of garlic, drizzle with a little olive oil, and bake for 50-60 minutes until caramelized.

  3. While the garlic is roasting, boil the pasta according to package instructions and reserve a little of the pasta water when draining.

  4. Once the garlic is ready, squeeze the cloves into a large bowl.

  5. Add a couple of tablespoons of olive oil, a couple of tablespoons of the reserved pasta water, a little salt, the zest and juice of 1 unwaxed lemon, and lots of chopped fresh parsley to the bowl.

  6. Mix everything well and stir through the warm pasta.
