Vegan Cauliflower Tabbouleh Salad

Ingredients

  • 1 head of cauliflower
  • 2 cups cherry tomatoes
  • 1 cucumber
  • 1 red onion
  • 1 bunch of fresh parsley
  • 1/4 cup fresh mint leaves
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • salt and pepper to taste

Preparation

  1. Rice the cauliflower in a food processor until it resembles rice grains

  2. Chop the cherry tomatoes, cucumber, red onion, parsley, and mint

  3. Combine the riced cauliflower, chopped vegetables, and herbs in a large bowl

  4. Add olive oil, lemon juice, salt, and pepper to taste

  5. Toss to combine until well mixed

  6. Serve chilled or at room temperature
