Vegan Cauliflower Tabbouleh Salad
Ingredients
- 1 head of cauliflower
- 2 cups cherry tomatoes
- 1 cucumber
- 1 red onion
- 1 bunch of fresh parsley
- 1/4 cup fresh mint leaves
- 1/4 cup olive oil
- 1/4 cup lemon juice
- salt and pepper to taste
Preparation
Rice the cauliflower in a food processor until it resembles rice grains
Chop the cherry tomatoes, cucumber, red onion, parsley, and mint
Combine the riced cauliflower, chopped vegetables, and herbs in a large bowl
Add olive oil, lemon juice, salt, and pepper to taste
Toss to combine until well mixed
Serve chilled or at room temperature
