Vegan Kale Salad with Avocado and Cranberries

Ingredients

  • 1 bunch of kale
  • 1 avocado
  • 1 carrot
  • 1 cucumber
  • 1/4 cup sunflower seeds
  • 1/4 cup dried cranberries
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Preparation

  1. Wash the kale leaves and remove the tough stems, then chop into bite-sized pieces

  2. Whisk together the olive oil, lemon juice, salt, and pepper in a small bowl to make the dressing

  3. Pour a small amount of the dressing over the kale and massage with your hands until tender

  4. Let the kale sit for 5 to 10 minutes

  5. Chop the avocado, carrot, and cucumber into small pieces

  6. Add the avocado, carrot, cucumber, sunflower seeds, and dried cranberries to the kale

  7. Pour the remaining dressing over the salad and toss gently to combine

  8. Serve immediately
