Citrus Avocado Salad with Vinaigrette

Ingredients

Salad

  • Oranges
  • Avocado
  • Butter greens
  • Crunchy nuts

Vinaigrette

  • 1 tbsp blood orange juice
  • 3 tbsp champagne vinegar
  • 1 tsp Dijon mustard
  • 1 tsp maple syrup
  • Pinch salt and cracked pepper
  • 1/4 cup olive oil

Preparation

  1. Segment the oranges and squeeze out 1 tablespoon of juice for the vinaigrette.

  2. Slice the avocado and prepare the butter greens by washing and drying them.

  3. Toast the nuts if desired for added crunch.

  4. For the vinaigrette, add all ingredients to a jar and shake vigorously to emulsify.

  5. Taste the vinaigrette and adjust seasoning as needed.

  6. Toss the salad ingredients together with the vinaigrette and serve immediately.
