Vegan Buffalo Chickpea Salad

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 4 cups mixed greens
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup sliced red onion
  • 1/4 cup diced cucumber
  • 1/4 cup diced avocado
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons vegan ranch dressing
  • 2 tablespoons buffalo sauce

Preparation

  1. Toss the chickpeas with olive oil, paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper

  2. Cook the seasoned chickpeas in a skillet over medium heat until crispy

  3. Toss the crispy chickpeas with buffalo sauce

  4. Combine mixed greens, cherry tomatoes, red onion, cucumber, avocado, and cilantro in a large bowl

  5. Add the buffalo chickpeas to the salad and drizzle with vegan ranch dressing

  6. Toss everything together until well combined
