Vegan Buffalo Chickpea Salad
Ingredients
- 1 can chickpeas, drained and rinsed
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon cayenne pepper
- Salt and pepper to taste
- 4 cups mixed greens
- 1/2 cup cherry tomatoes, halved
- 1/4 cup sliced red onion
- 1/4 cup diced cucumber
- 1/4 cup diced avocado
- 2 tablespoons chopped fresh cilantro
- 2 tablespoons vegan ranch dressing
- 2 tablespoons buffalo sauce
Preparation
Toss the chickpeas with olive oil, paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper
Cook the seasoned chickpeas in a skillet over medium heat until crispy
Toss the crispy chickpeas with buffalo sauce
Combine mixed greens, cherry tomatoes, red onion, cucumber, avocado, and cilantro in a large bowl
Add the buffalo chickpeas to the salad and drizzle with vegan ranch dressing
Toss everything together until well combined
