Vegan Buffalo Chickpea Salad
Ingredients
- 1 can chickpeas, drained and rinsed
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon cayenne pepper
- Salt and pepper to taste
- 4 cups mixed greens
- 1/2 cup cherry tomatoes, halved
- 1/4 cup sliced red onion
- 1/4 cup diced cucumber
- 1/4 cup diced avocado
- 2 tablespoons chopped fresh cilantro
- 2 tablespoons vegan ranch dressing
- 2 tablespoons buffalo sauce
Preparation
Drain and rinse the chickpeas, then pat them dry
In a bowl, combine chickpeas with olive oil, paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper, mixing until evenly coated
Add buffalo sauce to the chickpea mixture and stir well to incorporate
In a large salad bowl, combine mixed greens, halved cherry tomatoes, sliced red onion, diced cucumber, diced avocado, and chopped cilantro
Add the buffalo chickpeas to the salad greens mixture
Drizzle with vegan ranch dressing and toss gently to combine
Serve immediately for best freshness
