Greek Inspired Farro Salad
Ingredients
- Farro
- Green Beans
- Cherry Tomatoes
- Cucumber
- Red Onion
- Vegan Feta
- Kalamata Olives
- Oregano
Dressing
- Olive Oil
- Lemon Juice
- Dijon Mustard
- Capers
- Maple Syrup
- Oregano
- Salt and Pepper to taste
Preparation
Cook farro according to package instructions until tender.
Prepare green beans by blanching or steaming until crisp-tender.
Chop cherry tomatoes, cucumber, and red onion into bite-sized pieces.
Crumble vegan feta and pit Kalamata olives if necessary.
Whisk together dressing ingredients in a small bowl.
Combine cooked farro, green beans, chopped vegetables, vegan feta, and olives in a large bowl.
Pour dressing over the salad and toss gently to coat.
Serve chilled or at room temperature.
