Greek Inspired Farro Salad

Ingredients

  • Farro
  • Green Beans
  • Cherry Tomatoes
  • Cucumber
  • Red Onion
  • Vegan Feta
  • Kalamata Olives
  • Oregano

Dressing

  • Olive Oil
  • Lemon Juice
  • Dijon Mustard
  • Capers
  • Maple Syrup
  • Oregano
  • Salt and Pepper to taste

Preparation

  1. Cook farro according to package instructions until tender.

  2. Prepare green beans by blanching or steaming until crisp-tender.

  3. Chop cherry tomatoes, cucumber, and red onion into bite-sized pieces.

  4. Crumble vegan feta and pit Kalamata olives if necessary.

  5. Whisk together dressing ingredients in a small bowl.

  6. Combine cooked farro, green beans, chopped vegetables, vegan feta, and olives in a large bowl.

  7. Pour dressing over the salad and toss gently to coat.

  8. Serve chilled or at room temperature.
