10 Minute Greek Inspired Veggie Wrap

Ingredients

  • 1/2 cucumber, finely diced
  • 1 tomato, finely diced
  • 1 red onion, finely diced
  • 1 1/2 cups parsley, diced
  • 10 kalamata olives, diced
  • 1 lemon, squeezed
  • 1/2 teaspoon sea salt
  • Naan or pita bread
  • Vegan tzatziki (I used store-bought)
  • Hummus
  • Vegan feta (optional)

Preparation

  1. Finely dice the cucumber, tomato, red onion, parsley, and kalamata olives.

  2. Combine the diced vegetables and olives in a bowl.

  3. Squeeze the lemon juice over the mixture and add sea salt, then stir well to combine.

  4. Spread hummus and vegan tzatziki on naan or pita bread.

  5. Add the vegetable mixture to the bread and top with optional vegan feta.

  6. Roll up the wrap and serve immediately.

Notes

  1. This recipe can be prepared in about 10 minutes.

  2. Vegan tzatziki can be store-bought or homemade as preferred.
