Eat Your Greens Vegan Salad

Ingredients

  • broccoli
  • courgette
  • peas
  • rocket leaves
  • cucumber
  • avocado
  • mint
  • new potatoes

Dressing

  • green pesto (Sacla)
  • balsamic vinegar
  • lemon juice
  • mayo
  • black pepper
  • nutritional yeast

Preparation

  1. Steam the broccoli until tender.

  2. Prepare the dressing by mixing green pesto, balsamic vinegar, lemon juice, mayo, black pepper, and nutritional yeast in a bowl.

  3. Chop the courgette, cucumber, avocado, and mint as desired.

  4. In a large bowl, combine the steamed broccoli, chopped courgette, peas, rocket leaves, cucumber, avocado, mint, and new potatoes.

  5. Pour the dressing over the salad and toss gently to coat all ingredients evenly.
