Creamy Vegan Caesar Salad
Ingredients
- 1 cup cashews
- 1 cup water
- 2-3 large garlic cloves
- 2 tbsp yellow mustard
- 2 tbsp nutritional yeast
- 2 tbsp capers
- 1 large lemon juiced
- romaine lettuce
- spinach
- crispy chickpeas
- cashew parm
- dressing
Preparation
Soak cashews if you don’t have a high speed blender
To have a better chance of it being creamy
If i’m prepared enough sometimes i’ll just soak them for a couple hours before hand
But a longer soak is better
Blend all ingredients in blender till smooth and creamy
Store the leftover dressing in an airtight container in fridge for 2-4 days
Place the chickpeas into a frying pan with avocado oil, salt, pepper, garlic powder and fry on medium heat till crispy
Place greens in bowl and add chickpeas, cashew parmesan and pour the dressing over
Mix up and enjoy!
