Creamy Vegan Caesar Salad with Cashew Dressing
Ingredients
- 120g cashews (soaked)
- 4 Tbsp nutritional yeast
- 2 tsp Dijon mustard
- 2 cloves minced garlic
- 1 Tbsp capers
- 2 Tbsp lemon juice
- 1 Tbsp soy sauce
- 3 Tbsp water
- 4 Tbsp milk
- 1 Tsp maple syrup
- Good pinch of salt & pepper
Preparation
Soak the cashews in boiling water for 15 minutes, then drain.
To a blender, add the soaked cashews and all the remaining ingredients.
Blitz the mixture until smooth, which should take around 3-4 minutes.
Serve with plant-based chicken, crispy chickpeas, croutons, and baby gem lettuce.
