Creamy Vegan Caesar Salad with Cashew Dressing

Ingredients

  • 120g cashews (soaked)
  • 4 Tbsp nutritional yeast
  • 2 tsp Dijon mustard
  • 2 cloves minced garlic
  • 1 Tbsp capers
  • 2 Tbsp lemon juice
  • 1 Tbsp soy sauce
  • 3 Tbsp water
  • 4 Tbsp milk
  • 1 Tsp maple syrup
  • Good pinch of salt & pepper

Preparation

  1. Soak the cashews in boiling water for 15 minutes, then drain.

  2. To a blender, add the soaked cashews and all the remaining ingredients.

  3. Blitz the mixture until smooth, which should take around 3-4 minutes.

  4. Serve with plant-based chicken, crispy chickpeas, croutons, and baby gem lettuce.
