Vegan Quinoa Watermelon Feta Salad

Ingredients

  • 250g watermelon
  • 1 x 250g pouch of Merchant Gourmet Red & White Quinoa
  • 175g vegan feta
  • 200g cucumber
  • 2 sprigs of mint
  • 3 tbsp olive oil
  • Juice of 1 lime
  • Sea salt to season

Preparation

  1. Chop up the watermelon, feta and cucumber into small bite-sized cubes and toss in a large bowl with the quinoa until well-combined and distributed. Cover the salad with the olive oil, juice of a lime and sea salt.

  2. Chop up the mint leaves and add, stirring well before serving.
