Green Bean Quinoa Salad

Ingredients

  • 1/2 C @ancientharvest quinoa, cooked and cooled
  • 1 C fresh French style green beans, halved, blanched, and cooled
  • 1/2 bunch of parsley, chopped
  • small bunch of mint, chopped
  • handful of basil, chopped
  • 2 C @organicgirl arugula
  • 2 TBSP sliced almonds
  • 2 TBSP pine nuts, toasted
  • 1/2 C @driscollsberry blueberries
  • 1/2 @sumocitrus mandarin
  • 1/4 C garbanzo beans
  • 2 TBSP pickled onions, chopped
  • 1 TBSP @violife_foods vegan feta

Summer citrus vinaigrette

  • 1/4 C @bragglivefoodproducts ACV
  • 1/4 orange juice
  • 2 TBSP EVOO
  • 1 TBSP @justdatesyrup
  • 1 TBSP fresh ginger, grated
  • 1 tsp Dijon mustard
  • 1/2 tsp garlic powder
  • 1/2 tsp dried parsley
  • salt + pepper

Preparation

  1. Add all ingredients for salad to a large bowl.

  2. Put all ingredients for vinaigrette in a blender or bowl and purée or whisk vigorously until well combined.

  3. Drizzle over salad and toss to combine.
