Green Bean Quinoa Salad
Ingredients
- 1/2 C @ancientharvest quinoa, cooked and cooled
- 1 C fresh French style green beans, halved, blanched, and cooled
- 1/2 bunch of parsley, chopped
- small bunch of mint, chopped
- handful of basil, chopped
- 2 C @organicgirl arugula
- 2 TBSP sliced almonds
- 2 TBSP pine nuts, toasted
- 1/2 C @driscollsberry blueberries
- 1/2 @sumocitrus mandarin
- 1/4 C garbanzo beans
- 2 TBSP pickled onions, chopped
- 1 TBSP @violife_foods vegan feta
Summer citrus vinaigrette
- 1/4 C @bragglivefoodproducts ACV
- 1/4 orange juice
- 2 TBSP EVOO
- 1 TBSP @justdatesyrup
- 1 TBSP fresh ginger, grated
- 1 tsp Dijon mustard
- 1/2 tsp garlic powder
- 1/2 tsp dried parsley
- salt + pepper
Preparation
Add all ingredients for salad to a large bowl.
Put all ingredients for vinaigrette in a blender or bowl and purée or whisk vigorously until well combined.
Drizzle over salad and toss to combine.
