Fennel Brussel Sprout Salad with Lemon Vinaigrette
Ingredients
- arugula
- chopped frisée
- thinly sliced purple and green Brussel sprouts
- thinly sliced fennel bulb
- chopped parsley
- chopped honey crisp apple
- thinly sliced red onion
- golden raisins
- dried cranberries
- sliced almonds
Vinaigrette
- 1/4 C red wine vinegar
- juice of 1 lemon
- 2 tsp date syrup
- 1 tsp spicy Dijon mustard
- 2 tsp chopped fresh fennel sprigs
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1 TBSP extra virgin olive oil
Preparation
Add all ingredients for the salad to a large bowl.
Mix dressing ingredients in a blender until creamy. Drizzle over salad and toss to combine!
