Fennel Brussel Sprout Salad with Lemon Vinaigrette

Ingredients

  • arugula
  • chopped frisée
  • thinly sliced purple and green Brussel sprouts
  • thinly sliced fennel bulb
  • chopped parsley
  • chopped honey crisp apple
  • thinly sliced red onion
  • golden raisins
  • dried cranberries
  • sliced almonds

Vinaigrette

  • 1/4 C red wine vinegar
  • juice of 1 lemon
  • 2 tsp date syrup
  • 1 tsp spicy Dijon mustard
  • 2 tsp chopped fresh fennel sprigs
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1 TBSP extra virgin olive oil

Preparation

  1. Add all ingredients for the salad to a large bowl.

  2. Mix dressing ingredients in a blender until creamy. Drizzle over salad and toss to combine!
