Lemon Tahini Quinoa Salad with Apple Nachos
Ingredients
- 1/4 small red onion
- 1 carrot
- 1 can black beans
- 1 cup cooked quinoa
- 1 cup roasted broccoli
- 6-7 leaves of basil
Dressing
- Pinch of turmeric
- 1/4 tsp adobo seasoning (optional)
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- Juice of 1 lemon
- 1 tbsp apple cider vinegar
- 3-4 tbsp tahini
- 1/4 cup water
Apple nachos
- 1 apple
- Lemon juice
- Nut or seed butter
- Raisins
- Cacao nibs
- Coconut flakes
- Granola
- Chocolate chips
Preparation
In a small bowl combine dressing ingredients and whisk together until smooth then set aside.
In a medium bowl, combine remaining ingredients and toss together to mix.
Pour dressing over quinoa mix and toss together to combine well.
Pack with extra lemon wedges as desired.
Apple nachos
Cut an apple into wedges and coat with a squeeze of lemon juice.
Top with some nut or seed butter then sprinkle with extra toppings like raisins, cacao nibs, coconut flakes, granola or chocolate chips.
