Delicious Quinoa Salad with Vegetables
Ingredients
- 275 grams quinoa
- 1 eggplant
- 1 zucchini
- 1 red bell pepper
- 2 red onions
- 4 handfuls almonds
- 2 tablespoons tahini
- Salt and pepper
- Optional: arugula, lemon juice, pumpkin seeds, and cilantro
Preparation
Cook the quinoa according to package instructions and set it aside for a few minutes.
Roast the eggplant, zucchini, and red bell pepper in the oven at 180°C for 15-20 minutes.
Fry the red onion in a pan.
Mix the quinoa, vegetables, almonds, tahini, salt, and pepper.
Optionally add pumpkin seeds, cilantro, arugula, and/or lemon juice.
