Delicious Quinoa Salad with Vegetables

Ingredients

  • 275 grams quinoa
  • 1 eggplant
  • 1 zucchini
  • 1 red bell pepper
  • 2 red onions
  • 4 handfuls almonds
  • 2 tablespoons tahini
  • Salt and pepper
  • Optional: arugula, lemon juice, pumpkin seeds, and cilantro

Preparation

  1. Cook the quinoa according to package instructions and set it aside for a few minutes.

  2. Roast the eggplant, zucchini, and red bell pepper in the oven at 180°C for 15-20 minutes.

  3. Fry the red onion in a pan.

  4. Mix the quinoa, vegetables, almonds, tahini, salt, and pepper.

  5. Optionally add pumpkin seeds, cilantro, arugula, and/or lemon juice.
