Avocado Rose Couscous Salad with Dressing

Ingredients

  • 1 cup couscous
  • 1 red bell pepper
  • 1 cup small cucumbers
  • 2 cups mixed greens
  • 1/3 cup kalamata olives
  • 1/8 cup almonds
  • 1/2 jalapeno
  • 1 avocado

Tahini dressing

  • 3 tablespoons lemon juice
  • 3 tablespoons extra virgin olive oil
  • 3 tablespoons tahini
  • 1 tablespoon water
  • 1 garlic clove
  • 1/4 teaspoon salt
  • sumac

Preparation

  1. In a small pot on medium heat, add 1/2 teaspoon extra virgin olive oil. Once it shimmers, add the couscous and toss for 1-2 minutes to add depth of flavor.

  2. Add 1.5 cups hot tap water, cover, and simmer on medium-low heat for about 10 minutes.

  3. Remove from heat, transfer to a bowl, and mix in the vegetables.

  4. Cover with dressing as desired, serve over mixed greens, and top with avocado.

  5. If olives are not preferred, substitute with roughly chopped artichoke hearts.

Dressing

  1. Combine lemon juice, extra virgin olive oil, tahini, water, minced garlic clove, salt, and sumac.

  2. Muddle or use a blender to mix all ingredients until well blended.
