Baby Kale Salad with Avocado Cilantro Dressing

Ingredients

  • Baby kale
  • Roasted sweet potatoes
  • Cooked lentils
  • Cucumbers
  • Avocados
  • Tomatoes
  • Artichoke hearts
  • Olives
  • Blueberries

Dressing

  • 1 ripe avocado
  • Juice from 1 lemon
  • Handful of cilantro
  • 1 tbsp vegan unsweetened yogurt
  • 1/3 cup water
  • 2 cloves garlic
  • Salt and pepper to taste

Preparation

  1. Blend all dressing ingredients in a high-speed blender until smooth.

  2. Roast sweet potatoes at 200°C for 30-40 minutes or until tender

  3. Cook lentils according to package instructions until tender

  4. Chop cucumbers, slice avocados and tomatoes as needed

  5. In a large bowl, combine baby kale with the creamy avocado cilantro dressing

  6. Add roasted sweet potatoes, cooked lentils, cucumbers, avocados, tomatoes, artichoke hearts, olives, and blueberries. Toss to mix well
