Avocado Cashew Pasta Salad with Peanuts

Ingredients

Dressing

  • 1 ripe avocado
  • 1 clove of garlic
  • 10-15 soaked cashews
  • 5-7 roasted peanuts
  • Lemon to taste
  • Salt to taste
  • Pepper to taste
  • 1/2 tsp curry powder
  • Water as needed

Salad components

  • Pasta (any type)
  • Brussel sprouts
  • Yellow peppers
  • Tomatoes
  • Cucumbers
  • Shallots
  • Roasted and sautéed peanuts with salt and curry powder

Preparation

  1. Blend the dressing ingredients in a mixer and add water to achieve the desired consistency.

  2. Roast and sauté peanuts with salt and curry powder until crunchy.

  3. Cook pasta according to package instructions until al dente.

  4. Chop the vegetables into bite-sized pieces.

  5. Combine the cooked pasta, chopped vegetables, roasted peanuts, and dressing in a large bowl.

  6. Mix well and serve immediately or chilled.
