Greek Salad Topped Hummus

Ingredients

  • 4 tablespoons tahini
  • 1 can chickpeas or garbanzo beans
  • 3 tbsp filtered water
  • 1/2 lemon, seeded and juiced
  • 1 tbsp olive oil
  • 1 tbsp garlic powder
  • 1 clove garlic
  • 1 tsp salt
  • 1 tsp pepper
  • 1/4 cup kalamata olives
  • 1/4 cup chopped tomatoes
  • 1/4 cup chopped cucumbers
  • 1/4 cup red onions, chopped
  • 1/4 cup artichoke hearts, chopped
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon sesame seeds
  • 2 teaspoons olive oil
  • salt and pepper to taste

Preparation

  1. Drain and rinse the beans to get any excess can juice that might have been on the beans

  2. For a creamer hummus remove the chickpeas skins

  3. In a food processor or high powered blender combine the chickpeas, tahini, lemon juice, filtered water, garlic powder, salt, and olive oil

  4. Blend all ingredients together until creamy

  5. Scrap hummus into a serving bowl

  6. Hummus toppings

  7. Mix all components in a small bowl

  8. Sprinkle hummus with topping and serve
