Chickpea Caesar Salad
Ingredients
- 2 large sweet potatoes
- 2 tbsp olive oi
- 1 tsp garlic powder
- 1 lb of brussel sprouts
- 1 tbsp olive oil
- 1/2 lemon juice
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 lemon
Preparation
Preheated oven time 425F
Irst, I cubed 2 large sweet potatoes and coated with 2 tbsp olive oil 1 tsp garlic powder, sprinkle of salt and pepper. Added to a greased pan. Set aside
Then a cut 1 lb of brussel sprouts in half. Added to a bowl and coated with 1 tbsp olive oil + 1/2 lemon juice + 1 tsp garlic powder + 1/2 tsp onion powder. Added to the pan with the sweet potatoes. Roasted for 35 minutes
While those veggies cooked, I drained and washed a can of chickpeas. Patted them dry. Coated with 1 tbsp olive oil, 1 tsp garlic powder, juice from 1/2 lemon, salt & pepper. Added to a greased pan and only baked for 15 minutes
Finall, I coated my kale with a little bit of olive oil and massaged it. Sounds so weird but it makes the kale sooo tasty! I don’t use a ton of oil because that makes it soggy
