Creamy Potato Salad

Ingredients

  • 2lbs of small potatoes ⁣
  • 1 cup of peas ⁣
  • dressing: ⁣
  • 3 tbs of vegan mayo ⁣
  • 2 tbs of dijon mustard ⁣
  • 2 tbs of olive oil ⁣
  • 1/4 tsp of salt ⁣
  • 1/2 tsp of pepper ⁣
  • 1 tbs of nutritional yeast ⁣
  • 1/4 tsp of garlic powder ⁣
  • Juice of 1/2 lemon ⁣

Preparation

  1. Pre-heat oven at 450F.⁣

  2. Halve your potatoes and place on lined baking sheet. ⁣

  3. Drizzle some olive oil, salt and pepper on potatoes before placing in the oven. ⁣

  4. Bake for about 20 minutes or until golden brown. ⁣

  5. While potatoes are in the oven, start making the dressing by adding the rest of your ingredients in a mixing bowl

  6. Mix well. ⁣

  7. Add in your potatoes in the dressing and mix well.⁣

  8. Add your peas and gently mix. ⁣
