Spinach Avocado Dip with Almonds

Ingredients

  • 2 cups of spinach or baby spinach
  • 1 cup raw almonds
  • 1 small to medium ripe avocado
  • 2 tablespoons olive oil
  • 1 mega size garlic clove or 2 small
  • Juice from half a lemon
  • 2 tablespoons water
  • 1/2 teaspoon ground sea salt or to taste
  • Pepper to taste

Preparation

  1. Place all ingredients in food processor and blend until smooth. You may need to add a dash more water to reach your desired consistency, but add it 1 teaspoon at a time.

  2. Scrape into a pretty bowl and smooth out with the flat side of a spoon.

  3. Add an extra swirl of olive oil, a squeeze of lemon, a dash of chili flakes, and a little extra pepper.

  4. Note: This dip can be used as a side with meals or on sourdough with eggs, and it remains good for a few days as stored.
