Avocado Garlicky Mushroom Toast

Ingredients

Mushrooms

  • 250-300g chestnut mushrooms
  • 1 clove garlic, crushed
  • 1 tablespoon olive oil
  • a generous splash of tamari sauce
  • 2 tablespoons thyme leaves
  • a sprinkle of black pepper

Avocado

  • 1 ripe avocado
  • juice of 1/2 lemon
  • a pinch of sea salt or pink Himalayan salt

Bread

  • 2 large slices of bread

Preparation

  1. Prepare the mushrooms by crushing the garlic.

  2. Heat olive oil in a pan, add garlic and mushrooms, and cook until softened. Stir in tamari sauce, thyme leaves, and black pepper.

  3. Mash the avocado with lemon juice and salt.

  4. Toast the bread slices.

  5. Assemble by spreading the mashed avocado on the toasted bread and topping with the mushroom mixture.
