Avocado Garlicky Mushroom Toast
Ingredients
- 2 large slices of bread
Mushrooms
- 250-300g chestnut mushrooms
- 1 clove garlic, crushed
- 1 tablespoon olive oil
- a generous splash of tamari sauce
- 2 tablespoons thyme leaves
- a sprinkle of black pepper
Avocado
- 1 ripe avocado
- juice of 1/2 lemon
- a pinch of sea salt or pink Himalayan salt
Preparation
Toast the bread slices until golden brown.
Heat olive oil in a pan over medium heat.
Add crushed garlic and sauté for 1 minute until fragrant.
Add mushrooms, tamari sauce, thyme leaves, and black pepper. Cook until mushrooms are tender, about 5-7 minutes.
In a bowl, mash the avocado with lemon juice and salt until smooth.
Spread the mashed avocado evenly on the toasted bread slices.
Top with the cooked mushroom mixture and serve immediately.
