Avocado Garlicky Mushroom Toast

Ingredients

  • 2 large slices of bread

Mushrooms

  • 250-300g chestnut mushrooms
  • 1 clove garlic, crushed
  • 1 tablespoon olive oil
  • a generous splash of tamari sauce
  • 2 tablespoons thyme leaves
  • a sprinkle of black pepper

Avocado

  • 1 ripe avocado
  • juice of 1/2 lemon
  • a pinch of sea salt or pink Himalayan salt

Preparation

  1. Toast the bread slices until golden brown.

  2. Heat olive oil in a pan over medium heat.

  3. Add crushed garlic and sauté for 1 minute until fragrant.

  4. Add mushrooms, tamari sauce, thyme leaves, and black pepper. Cook until mushrooms are tender, about 5-7 minutes.

  5. In a bowl, mash the avocado with lemon juice and salt until smooth.

  6. Spread the mashed avocado evenly on the toasted bread slices.

  7. Top with the cooked mushroom mixture and serve immediately.
