Mashed Avocado on Rye Bread with Garlic Mushrooms
Ingredients
Mushrooms
- About 250/300g chestnut mushrooms
- 1 clove of garlic, crushed
- 1 tablespoon of olive oil
- a generous splash of tamari sauce
- 2 tablespoons of thyme leaves
- a sprinkle of black pepper
Avocado
- 1 ripe avocado
- the juice of 1/2 lemon
- a pinch of sea salt or pink Himalayan salt
- 2 slices of bread of your choice
Preparation
Wash and slice the mushrooms.
Heat up the olive oil in a frying pan.
Add the crushed garlic and cook for 1 minute, stirring to prevent burning.
Add the sliced mushrooms and tamari sauce, cook for 8-10 minutes until all the water evaporates.
Add the fresh thyme and black pepper.
Mash the avocado with a fork and add lemon juice and salt.
Toast the bread.
Spread a thick layer of avocado on the toast and top with mushrooms. Enjoy!
