Mashed Avocado on Rye Bread with Garlic Mushrooms

Ingredients

Mushrooms

  • About 250/300g chestnut mushrooms
  • 1 clove of garlic, crushed
  • 1 tablespoon of olive oil
  • a generous splash of tamari sauce
  • 2 tablespoons of thyme leaves
  • a sprinkle of black pepper

Avocado

  • 1 ripe avocado
  • the juice of 1/2 lemon
  • a pinch of sea salt or pink Himalayan salt
  • 2 slices of bread of your choice

Preparation

  1. Wash and slice the mushrooms.

  2. Heat up the olive oil in a frying pan.

  3. Add the crushed garlic and cook for 1 minute, stirring to prevent burning.

  4. Add the sliced mushrooms and tamari sauce, cook for 8-10 minutes until all the water evaporates.

  5. Add the fresh thyme and black pepper.

  6. Mash the avocado with a fork and add lemon juice and salt.

  7. Toast the bread.

  8. Spread a thick layer of avocado on the toast and top with mushrooms. Enjoy!
