Avocado Garlicky Mushroom Toast
Ingredients
Mushrooms
- About 250/300g chestnut mushrooms
- 1 clove of garlic, crushed
- 1 tablespoon of olive oil
- A generous splash of tamari sauce
- 2 tablespoons of thyme leaves
- A sprinkle of black pepper
Avocado
- 1 ripe avocado
- The juice of 1/2 lemon
- A pinch of sea salt or pink Himalayan salt
Bread
- 2 large slices of bread
Preparation
Toast the bread slices until golden
Heat olive oil in a pan over medium heat, add crushed garlic and cook for 30 seconds, then add mushrooms, tamari sauce, thyme leaves, and black pepper; stir and cook until mushrooms are tender, about 5-7 minutes
Mash the ripe avocado with lemon juice and a pinch of salt in a bowl until smooth
Assemble by spreading the avocado mash on the toasted bread and topping with the garlicky mushrooms
