Avocado Garlicky Mushroom Toast

Ingredients

Mushrooms

  • About 250/300g chestnut mushrooms
  • 1 clove of garlic, crushed
  • 1 tablespoon of olive oil
  • A generous splash of tamari sauce
  • 2 tablespoons of thyme leaves
  • A sprinkle of black pepper

Avocado

  • 1 ripe avocado
  • The juice of 1/2 lemon
  • A pinch of sea salt or pink Himalayan salt

Bread

  • 2 large slices of bread

Preparation

  1. Toast the bread slices until golden

  2. Heat olive oil in a pan over medium heat, add crushed garlic and cook for 30 seconds, then add mushrooms, tamari sauce, thyme leaves, and black pepper; stir and cook until mushrooms are tender, about 5-7 minutes

  3. Mash the ripe avocado with lemon juice and a pinch of salt in a bowl until smooth

  4. Assemble by spreading the avocado mash on the toasted bread and topping with the garlicky mushrooms
