Avocado Garlicky Mushroom Toast
Ingredients
Mushrooms
- About 250-300g chestnut mushrooms
- 1 clove garlic
- 1 tablespoon olive oil
- a generous splash of tamari sauce
- 2 tablespoons thyme leaves
- a sprinkle of black pepper
Avocado
- 1 ripe avocado
- juice of 1/2 lemon
- a pinch of sea salt or pink Himalayan salt
Preparation
Crush the garlic clove
Heat 1 tablespoon of olive oil in a pan over medium heat
Add the crushed garlic and cook for 1 minute until fragrant
Add 250-300g of chestnut mushrooms, a generous splash of tamari sauce, 2 tablespoons of thyme leaves, and a sprinkle of black pepper to the pan
Cook the mushrooms until tender, about 5-7 minutes
Mash 1 ripe avocado with the juice of 1/2 lemon and a pinch of sea salt or pink Himalayan salt
Toast 2 large slices of bread
Spread the mashed avocado on the toasted bread slices
Top with the cooked mushroom mixture
