Avocado Garlicky Mushroom Toast

Ingredients

Mushrooms

  • About 250-300g chestnut mushrooms
  • 1 clove garlic
  • 1 tablespoon olive oil
  • a generous splash of tamari sauce
  • 2 tablespoons thyme leaves
  • a sprinkle of black pepper

Avocado

  • 1 ripe avocado
  • juice of 1/2 lemon
  • a pinch of sea salt or pink Himalayan salt

Preparation

  1. Crush the garlic clove

  2. Heat 1 tablespoon of olive oil in a pan over medium heat

  3. Add the crushed garlic and cook for 1 minute until fragrant

  4. Add 250-300g of chestnut mushrooms, a generous splash of tamari sauce, 2 tablespoons of thyme leaves, and a sprinkle of black pepper to the pan

  5. Cook the mushrooms until tender, about 5-7 minutes

  6. Mash 1 ripe avocado with the juice of 1/2 lemon and a pinch of sea salt or pink Himalayan salt

  7. Toast 2 large slices of bread

  8. Spread the mashed avocado on the toasted bread slices

  9. Top with the cooked mushroom mixture
