Avocado Garlicky Mushroom Toast
Ingredients
Mushrooms
- About 250/300g chestnut mushrooms
- 1 crushed garlic clove
- 1 tablespoon olive oil
- Generous splash tamari sauce
- 2 tablespoons thyme leaves
- Sprinkle black pepper
Avocado
- 1 ripe avocado
- Juice of 1/2 lemon
- Pinch of sea salt or pink Himalayan salt
Preparation
Toast 2 large slices of bread until golden
Heat olive oil in a pan over medium heat, add crushed garlic and mushrooms, cook until softened
Add tamari sauce, thyme leaves, and black pepper to the mushrooms, stir and cook for a few minutes until flavors combine
In a bowl, mash the avocado with lemon juice and salt until smooth
Spread the mashed avocado onto the toasted bread slices
Top with the cooked mushroom mixture and serve immediately
