Avocado Garlicky Mushroom Toast

Ingredients

Mushrooms

  • About 250/300g chestnut mushrooms
  • 1 crushed garlic clove
  • 1 tablespoon olive oil
  • Generous splash tamari sauce
  • 2 tablespoons thyme leaves
  • Sprinkle black pepper

Avocado

  • 1 ripe avocado
  • Juice of 1/2 lemon
  • Pinch of sea salt or pink Himalayan salt

Preparation

  1. Toast 2 large slices of bread until golden

  2. Heat olive oil in a pan over medium heat, add crushed garlic and mushrooms, cook until softened

  3. Add tamari sauce, thyme leaves, and black pepper to the mushrooms, stir and cook for a few minutes until flavors combine

  4. In a bowl, mash the avocado with lemon juice and salt until smooth

  5. Spread the mashed avocado onto the toasted bread slices

  6. Top with the cooked mushroom mixture and serve immediately
