Avocado Garlicky Mushroom Toast
Ingredients
Mushrooms
- About 250/300gr of chestnut mushrooms
- 1 clove of garlic -crushed
- 1 tablespoon of olive oil
- a generous splash of tamari sauce
- 2 tablespoons of thyme leaves
- a sprinkle of black pepper
Avocado
- 1 ripe avocado
- the juice of 1/2 lemon
- a pinch of sea salt or pink Himalayan salt
Preparation
Toast 2 large slices of bread until golden.
Heat olive oil in a pan over medium heat. Add crushed garlic and sauté for 1 minute.
Add chestnut mushrooms and cook until softened, about 5-7 minutes.
Stir in tamari sauce, thyme leaves, and black pepper. Cook for another 1-2 minutes.
In a bowl, mash the ripe avocado with lemon juice and a pinch of salt until smooth.
Spread the avocado mixture evenly on the toasted bread slices.
Top with the garlicky mushrooms and serve immediately.
