Avocado Garlicky Mushroom Toast

Ingredients

Mushrooms

  • About 250/300gr of chestnut mushrooms
  • 1 clove of garlic -crushed
  • 1 tablespoon of olive oil
  • a generous splash of tamari sauce
  • 2 tablespoons of thyme leaves
  • a sprinkle of black pepper

Avocado

  • 1 ripe avocado
  • the juice of 1/2 lemon
  • a pinch of sea salt or pink Himalayan salt

Preparation

  1. Toast 2 large slices of bread until golden.

  2. Heat olive oil in a pan over medium heat. Add crushed garlic and sauté for 1 minute.

  3. Add chestnut mushrooms and cook until softened, about 5-7 minutes.

  4. Stir in tamari sauce, thyme leaves, and black pepper. Cook for another 1-2 minutes.

  5. In a bowl, mash the ripe avocado with lemon juice and a pinch of salt until smooth.

  6. Spread the avocado mixture evenly on the toasted bread slices.

  7. Top with the garlicky mushrooms and serve immediately.
