Raw Pasta Sauce with Sautéed Zoodles

Ingredients

  • 1 lb chopped tomatoes
  • 1/3 cup chopped basil
  • 2 tbsp sliced olives
  • 1/4 cup olive oil
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 minced garlic clove
  • 3 zucchini
  • olive oil for sautéing

Preparation

  1. To a large bowl, add 1 lb of chopped tomatoes, 1/3 cup of chopped basil, 2 tbsp sliced olives, 1/4 cup olive oil, 1/2 tsp of salt, 1/2 tsp of pepper, and one minced garlic clove.

  2. Stir it together and let it sit on the counter.

  3. Spiralize three zucchini to make zoodles.

  4. Drizzle some olive oil into a pan over medium-low heat.

  5. When the oil is hot, add the zoodles and toss well.

  6. Cook until the zoodles are just done.

  7. Add salt and pepper to taste.

  8. Add the sauce to the zoodles and mix well.

  9. Take off the heat and serve, optionally with chicken or any meat you choose.
