Sautéed Zoodles with Raw Pasta Sauce

Ingredients

  • 1 lb chopped tomatoes
  • 1/3 cup chopped basil
  • 2 tbsp sliced olives
  • 1/4 cup olive oil
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 garlic clove, minced
  • 3 zucchini

Preparation

  1. In a large bowl, add 1 lb chopped tomatoes, 1/3 cup chopped basil, 2 tbsp sliced olives, 1/4 cup olive oil, 1/2 tsp salt, 1/2 tsp pepper, and one minced garlic clove. Stir together and let it sit on the counter.

  2. Spiralize three zucchini to make zoodles.

  3. Drizzle some olive oil into a pan over medium-low heat.

  4. When hot, add the zoodles and toss well.

  5. Cook until the zoodles are just done.

  6. Add salt and pepper to taste.

  7. Add the sauce to the zoodles and mix well.

  8. Take off the heat.

  9. Serve with some chicken or any meat you choose.
