Cilantro and Basil Pesto with Avocado

Ingredients

  • 2 cloves garlic
  • 1 tbsp nutritional yeast
  • 1/4 cup fresh cilantro (can be omitted, increase basil to 1 cup)
  • 1/4 cup pumpkin seeds
  • Juice of 1 lemon
  • 3/4 cup basil, packed
  • 1/2 cup water
  • 1 ripe avocado
  • Salt and pepper to taste

Preparation

  1. Combine all ingredients except water in a food processor and blend until smooth.

  2. Add 1/4 cup of water and blend.

  3. Add the remaining 1/4 cup of water to thin out further.

  4. If the sauce is too thick, add additional water 2 tablespoons at a time.

  5. Use the sauce as desired.
