Cilantro and Basil Pesto with Avocado
Ingredients
- 2 cloves garlic
- 1 tbsp nutritional yeast
- 1/4 cup fresh cilantro (can be omitted, increase basil to 1 cup)
- 1/4 cup pumpkin seeds
- Juice of 1 lemon
- 3/4 cup basil, packed
- 1/2 cup water
- 1 ripe avocado
- Salt and pepper to taste
Preparation
Combine all ingredients except water in a food processor and blend until smooth.
Add 1/4 cup of water and blend.
Add the remaining 1/4 cup of water to thin out further.
If the sauce is too thick, add additional water 2 tablespoons at a time.
Use the sauce as desired.
