Brazil Cilantro Pesto Linguine
Ingredients
- 2 cloves garlic
- 1 tbsp nutritional yeast
- 1/4 cup fresh cilantro (can leave out and just add a full cup of basil below instead of 3/4 cup)
- 1/4 cup pumpkin seeds
- Juice of 1 lemon
- 3/4 cup basil, packed
- 1/2 cup water
- 1 ripe avocado
- Salt and pepper
Preparation
Combine all ingredients except water in a food processor and blend until smooth
Add 1/4 cup of water and blend
Add remaining 1/4 cup of water to thin out further
Add additional water if needed if sauce is too thick (2 tbsp at a time)
Use sauce as desired
