Brazil Cilantro Pesto Linguine

Ingredients

  • 2 cloves garlic
  • 1 tbsp nutritional yeast
  • 1/4 cup fresh cilantro (can leave out and just add a full cup of basil below instead of 3/4 cup)
  • 1/4 cup pumpkin seeds
  • Juice of 1 lemon
  • 3/4 cup basil, packed
  • 1/2 cup water
  • 1 ripe avocado
  • Salt and pepper

Preparation

  1. Combine all ingredients except water in a food processor and blend until smooth

  2. Add 1/4 cup of water and blend

  3. Add remaining 1/4 cup of water to thin out further

  4. Add additional water if needed if sauce is too thick (2 tbsp at a time)

  5. Use sauce as desired
