Basil Pesto Gnocchi
Ingredients
- 17 oz of gnocchi
- - 2 tbs of olive oil
- - Salt/pepper to taste
- 1 handful of fresh basil
- - 1 handful of spinach
- - 2 small garlic cloves
- - 2 tbs of nutritional yeast
- - 1/3 cup of walnuts
- - 2 tbs of olive oil
- - Juice of 1 lemon
- - 2 tbs of water
- - Salt/pepper to taste
- 1 handful of fresh basil
- - 1 handful of spinach

- - 1/3 cup of walnuts
- - 2 tbs of olive oil
- - Juice of 1 lemon
- - 2 tbs of water
- - Salt/pepper to taste
Preparation
In a medium-sized pan, add gnocchi and olive oil. Cook on medium-low for about 10 minutes.
Remove gnocchi from the pan.
Mix in your Homemade Basil Pesto in with your gnocchi

Add all ingredients to the food processor. Process until smooth & creamy.
