Kale Salad with Dill Avocado Dressing

Ingredients

  • kale
  • baked tofu
  • pomegranate seeds
  • cubed avocado
  • sliced cucumber
  • shredded carrots

Dill avocado dressing

  • 1/2 a ripe avocado
  • 3-4 sprigs fresh dill
  • Juice of half a small lime
  • 2 tsp apple cider vinegar
  • 1/2 tsp garlic powder
  • 2 tsp vegan liquid sweetener of choice
  • Pinch of salt
  • 1/4 cup water

Preparation

  1. Bake the tofu until crispy and golden brown

  2. Combine all ingredients for the dill avocado dressing in a small blender and blend until creamy.

  3. If the dressing is too thick, add a little more water to achieve the desired consistency.

  4. Add a small amount of the dressing to the kale.

  5. Assemble the salad by placing the baked tofu, pomegranate seeds, cubed avocado, sliced cucumber, and shredded carrots in a bowl

  6. Top the assembled salad with the dressed kale and serve. Enjoy!
