Kale Salad with Dill Avocado Dressing
Ingredients
- kale
- baked tofu
- pomegranate seeds
- cubed avocado
- sliced cucumber
- shredded carrots
Dill avocado dressing
- 1/2 a ripe avocado
- 3-4 sprigs fresh dill
- Juice of half a small lime
- 2 tsp apple cider vinegar
- 1/2 tsp garlic powder
- 2 tsp vegan liquid sweetener of choice
- Pinch of salt
- 1/4 cup water
Preparation
Bake the tofu until crispy and golden brown
Combine all ingredients for the dill avocado dressing in a small blender and blend until creamy.
If the dressing is too thick, add a little more water to achieve the desired consistency.
Add a small amount of the dressing to the kale.
Assemble the salad by placing the baked tofu, pomegranate seeds, cubed avocado, sliced cucumber, and shredded carrots in a bowl
Top the assembled salad with the dressed kale and serve. Enjoy!
