Pomegranate and Kale Salad with Peanut Butter Dressing

Ingredients

Dressing

  • 3 tbsp apple cider vinegar
  • 2 tbsp crunchy peanut butter
  • 1 tbsp white miso
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tbsp wholegrain mustard

Salad

  • 200g kale
  • 1 avocado
  • 100g pomegranate seeds
  • 200g diced cooked sweet potato
  • a handful of parsley

Preparation

  1. Put all the dressing ingredients in a bowl and mix well to combine.

  2. Shred the kale and massage the dressing into the leaves.

  3. Chop the avocado and parsley and combine with the kale, sweet potato and pomegranate in a large bowl.

  4. Let sit for 15 minutes before eating to allow the kale to soften and be easier to chew.
