Tasty Pomegranate and Kale Salad

Ingredients

  • 3 tbsp apple cider vinegar
  • 2 tbsp crunchy peanut butter
  • 1 tbsp white miso
  • 1/2 tsp each garlic and onion powder
  • 1/2 tbsp wholegrain mustard
  • salad:
  • 200g kale
  • 1 avocado
  • 100g pomegranate seeds
  • 200g diced, cooked sweet potato

Preparation

  1. A handful of parsley

  2. Put all the dressing ingredients in a bowl and mix well to combine. Shred the kale and massage the dressing into the leaves. Chop the avocado and parsley and combine with the kale, sweet potato and Pomegranate in a large bowl. Let sit for 15 minutes before eating as the kale will soften and be easier to chew
