Kale Salad with Dill Avocado Dressing
Ingredients
- kale
- baked tofu
- pomegranate seeds
- cubed avocado
- sliced cucumber
- shredded carrots
Dressing
- 1/2 ripe avocado
- 3-4 sprigs fresh dill
- juice of half a small lime
- 2 tsp apple cider vinegar
- 1/2 tsp garlic powder
- 2 tsp vegan liquid sweetener of choice
- pinch of salt
- 1/4 cup water
Preparation
Combine all ingredients in a small blender and blend until creamy.
Add a little more water if sauce is too thick for your liking.
Add a little of the dressing to the kale, then top over the completed bowl.
