Kale Salad with Dill Avocado Dressing

Ingredients

  • kale
  • baked tofu
  • pomegranate seeds
  • cubed avocado
  • sliced cucumber
  • shredded carrots

Dressing

  • 1/2 ripe avocado
  • 3-4 sprigs fresh dill
  • juice of half a small lime
  • 2 tsp apple cider vinegar
  • 1/2 tsp garlic powder
  • 2 tsp vegan liquid sweetener of choice
  • pinch of salt
  • 1/4 cup water

Preparation

  1. Combine all ingredients in a small blender and blend until creamy.

  2. Add a little more water if sauce is too thick for your liking.

  3. Add a little of the dressing to the kale, then top over the completed bowl.
