Easy Vegan Salad with Caesar Dressing

Ingredients

  • kale
  • cucumber
  • 1/2-1 avocado
  • 1/2 can chickpeas (optional)
  • vegan salmon or coconut bacon

Dressing components

  • 1/2 block silken tofu
  • 1 clove garlic
  • 1 heaped teaspoon miso
  • 1/2 lemon
  • 1 heaped tablespoon nutritional yeast
  • apple cider vinegar (splash)
  • almond milk (splash)
  • salt and pepper

Preparation

  1. Prepare the kale by washing, chopping, and massaging it. Optionally, sauté for a couple of minutes to reduce bitterness.

  2. Slice the cucumber.

  3. Cube the avocado.

  4. If using chickpeas, bake 1/2 can at 180°C for 25 minutes.

  5. Make the Caesar dressing by blending all dressing ingredients until smooth.

  6. Mix all salad ingredients together with the dressing.

  7. Serve with toast and flora butter, adding more vegan salmon if desired.
