Potato and Cucumber Salad with Herb Dressing
Ingredients
- Sliced potatoes
- 1/2 cup parsley
- 1/2 onion
- 2 garlic cloves
- 2 teaspoons Dijon mustard
- Juice of half a lemon
- 2 tablespoons olive oil
- Water from boiled potatoes
- 3 celery sticks
- 1/2 cucumber
- Salt for water
Preparation
Boil sliced potato in salt water until tender for 5-6 minutes.
For the dressing, add 1/2 cup parsley, 1/2 onion, 2 garlic cloves, two teaspoons Dijon mustard, juice of half a lemon, two tablespoons olive oil and water from the boiled potato. Mix all in a food processor.
Add to a large bowl the potatoes, parsley, 3 celery sticks, and 1/2 cucumber.
Toss together with the dressing and serve.
