Bbq Tofu Salad with Avocado Tahini Dressing
Ingredients
- 1 package extra firm tofu
- 1/2 cup bbq sauce
- 2 tbsp nutritional yeast
- Salt and pepper to taste
- 1 small avocado
- 1/4 cup tahini
- 1 tsp garlic
- 1/2 tsp dill
- Juice of 1/2-1 lemon (1 tbsp)
- 1/2-3/4 cup water
- Salt and pepper to taste
Preparation
Press your tofu for about 15 minutes.
Preheat the oven to 400°F (200°C).
In a bowl, combine 1/4 cup of the bbq sauce, nutritional yeast, salt, and pepper.
Cut the pressed tofu into cubes and toss them in the sauce mixture to coat.
Place the tofu cubes on a baking sheet and bake for 12-15 minutes on each side.
Remove the tofu from the oven and brush on the remaining 1/4 cup of bbq sauce.
For the avocado tahini dressing, blend together the small avocado, tahini, garlic, dill, lemon juice, water, salt, and pepper until smooth.
