Bbq Tofu Salad with Avocado Tahini Dressing

Ingredients

  • 1 package extra firm tofu
  • 1/2 cup bbq sauce
  • 2 tbsp nutritional yeast
  • Salt and pepper to taste
  • 1 small avocado
  • 1/4 cup tahini
  • 1 tsp garlic
  • 1/2 tsp dill
  • Juice of 1/2-1 lemon (1 tbsp)
  • 1/2-3/4 cup water
  • Salt and pepper to taste

Preparation

  1. Press your tofu for about 15 minutes.

  2. Preheat the oven to 400°F (200°C).

  3. In a bowl, combine 1/4 cup of the bbq sauce, nutritional yeast, salt, and pepper.

  4. Cut the pressed tofu into cubes and toss them in the sauce mixture to coat.

  5. Place the tofu cubes on a baking sheet and bake for 12-15 minutes on each side.

  6. Remove the tofu from the oven and brush on the remaining 1/4 cup of bbq sauce.

  7. For the avocado tahini dressing, blend together the small avocado, tahini, garlic, dill, lemon juice, water, salt, and pepper until smooth.
