Rainbow Wraps with Vegetables and Hummus

Ingredients

Hummus

  • 1 Tin Chickpeas (400g)
  • 3 Tbsp Tahini
  • 1 clove garlic
  • 1/2 Lemon
  • 2 Tsp cumin
  • 1 Tbsp chickpea juice
  • Salt and pepper

Wrap fillings

  • Red cabbage
  • Shredded carrots
  • Quinoa
  • Avocado
  • Lettuce
  • Hemp seeds (sprinkling)

Preparation

Hummus

  1. Drain chickpeas but keep some of the juice. Place all ingredients into a high speed blender and blend until smooth and creamy.

Wrap assembly

  1. Prepare a wrap base, such as a tortilla or lettuce leaf

  2. Spread hummus on the base

  3. Add red cabbage, shredded carrots, quinoa, avocado, and lettuce

  4. Sprinkle with hemp seeds

  5. Roll up the wrap and serve
