Rainbow Wraps with Vegetables and Hummus
Ingredients
Hummus
- 1 Tin Chickpeas (400g)
- 3 Tbsp Tahini
- 1 clove garlic
- 1/2 Lemon
- 2 Tsp cumin
- 1 Tbsp chickpea juice
- Salt and pepper
Wrap fillings
- Red cabbage
- Shredded carrots
- Quinoa
- Avocado
- Lettuce
- Hemp seeds (sprinkling)
Preparation
Hummus
Drain chickpeas but keep some of the juice. Place all ingredients into a high speed blender and blend until smooth and creamy.
Wrap assembly
Prepare a wrap base, such as a tortilla or lettuce leaf
Spread hummus on the base
Add red cabbage, shredded carrots, quinoa, avocado, and lettuce
Sprinkle with hemp seeds
Roll up the wrap and serve
