Lentil Salad Bowl with Yogurt Dressing
Ingredients
- 1 cup cooked lentils
- Heaping 1/4 tsp adobo seasoning or to taste
- 1/4 small red onion, diced or minced
- Handful of chopped cilantro
- 1 clove garlic, minced
- 1 tsp oregano
- Juice of one lemon
- Cashew yogurt
- Squeeze of lemon
- Salt
- Pinch of garlic powder
- Cooked tricolor rice
- Sautéed mushrooms
- Romaine lettuce
Preparation
In a bowl combine lentils, seasonings, onion, garlic and cilantro.
Squeeze fresh lemon juice over top and toss together.
Place in fridge to marinade for at least 30 minutes.
Toss once more and serve.
For the yogurt dressing, mix cashew yogurt, a squeeze of lemon, cilantro, salt, and a pinch of garlic powder.
Assemble the bowl by adding cooked tricolor rice, sautéed mushrooms, romaine lettuce, the lentil salad, and top with the yogurt dressing.
