Lentil Tahini Salad

Ingredients

  • 1 cup uncooked brown lentils
  • 2 cups vegetable broth
  • 1 tsp minced garlic
  • 1 tbsp tamari
  • 2 tsp apple cider vinegar
  • 1/2 a small red onion, minced
  • 1/2 bell pepper, finely diced
  • 1 head of broccoli, chopped into small pieces
  • salt and pepper to taste

Preparation

  1. In a medium sauce pan add rinsed and cleaned lentils and vegetable broth and garlic

  2. Bring to a boil then reduce to a simmer and allow to cook uncovered for about 10 minutes

  3. Cover with lid and allow to cook and absorb liquids for about 30 minutes or until lentils are tender

  4. Add in broccoli, onion and bell pepper and stir to combine then remove from heat immediately

  5. Add in remaining ingredients and adjust salt and pepper to taste

  6. You can either serve right away or allow to completely cool and save in the fridge for flavors to mingle

  7. Can be served warm or cold

  8. You can skip the cooking process all together and mix all the veggie ingredients raw and mixing it with 2 cups cooked lentils
