Mexican Salad with Homemade Cauliflower Taco Rice
Ingredients
- 1 cup frozen corn
- 1 tsp salt
- 1 tsp cumin
- 1 tsp paprika
- 1 lime
- cilantro for topping
Preparation
Sauté the onion in 1/2 tbsp olive oil on medium heat for 3 mins
Add in another 1/2 tbsp of olive oil and add in cauliflower rice, corn, and spices
Once everything is cooked, add in the juice from the lime and top with cilantro
