Mexican Salad with Homemade Cauliflower Taco Rice

Ingredients

  • 1 cup frozen corn
  • 1 tsp salt
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 lime
  • cilantro for topping

Preparation

  1. Sauté the onion in 1/2 tbsp olive oil on medium heat for 3 mins

  2. Add in another 1/2 tbsp of olive oil and add in cauliflower rice, corn, and spices

  3. Once everything is cooked, add in the juice from the lime and top with cilantro
