Hearts of Palm Ceviche
Ingredients
- 1 can of Hearts of Palm diced
- 1/2 cup Tomatoes diced
- 1-2 Jalapeños finely diced
- 1/3 cup Red Onion finely chopped
- 1/2 Avocado chopped
- 1/3 cup tightly packed Cilantro chopped
- Juice of 1 Lime
- Juice of 1 Orange
- Juice of 1/2 a Lemon
- Salt & Pepper to taste
Preparation
To a large bowl add the chopped Hearts of Palm, Red Onion, Jalapeño, Tomato, Avocado and Cilantro and mix well.
Add the Citrus Juices, Salt, Pepper and mix well.
Refrigerate for at least 30 minutes - 1 hour to let the flavors blend.
Serve with Plantain Strips
